How To Make Water Kefir

I do enjoy a crisp, refreshing glass of kombucha or water kefir every now and then (or perhaps a bit more frequently?). These drinks are naturally alive–they are liquid probiotics, and are cheap to easily prepare at home. While I’ve posted my recipe for kombucha before, today it’s all about that water kefir. You can flavor your water kefir however you so please.

I love using Cultures for Health as a great online resource for ALL things fermenting. This include ordering water kefir grains.

Water Kefir

Prep Time 5 minutes
Servings 6 people

Ingredients

  • 3 tablespoons water kefir grains see note for where to order
  • 1 quart filtered water
  • 1/4 cup white sugar
  • Juice from 1/2 lemon as well as the 1/2 lemon
  • 1 dried fig
  • 1 tablespoon pomegranate molasses optional

Instructions

  1. Pour water into quart-sized glass mason jar. Add in sugar and stir until dissolved.
  2. Add in (optional) pomegranate molasses, fig, lemon juice, 1/2 lemon and kefir grains.
  3. Cover with lid and let sit at room temperature for two days.
  4. After the two days, remove the fig, 1/2 lemon and kefir grains.
  5. Let fermented liquid sit for an additional day on countertop, then transfer to the refrigerator.
  6. To flavor your water kefir, add in additional flavors at this time and allow the water kefir to sit out for an addition 8-12 hours. Then, transfer to the fridge. This is an optional but super fun step! I like adding fresh herbs, pureed fruit, frozen or fresh fruit, or extra dried fruit. Let your imagination go wild!

  7. Keep the strained kefir grains for your next batch!
